Cretan Dakos

Ingredients :

4 large round barley rusks
3 large mature tomatoes (peeled and mashed)
Extra virgin olive oil
Mizithra cheese
Black olives and capers
Oregano
Salt

Method :

Moisten the rusks with some water and drizzle with olive oil
Use a grater to grate the tomatoes
Add salt, oregano and a little oil to the tomatoes and then put on top of the rusks
Add the mizithra cheese, sprinkle oregano and drizzle with olive oil
Top with olives and capers.
