500 grams of mizithra (soft goat cheese)
4-5 medium potatoes
4-5 medium zucchini
1 bunch of fresh mint
3 large tomatoes
Salt and pepper
1 cup of milk

 

Wash the zucchini well and peel the potatoes and add salt and pepper
Using a mandolin or slicer or a sharp knife cut both the potatoes and the zucchini into
Thin even slices. Set aside.
Grate the tomatoes
Wash and chop the fresh mint and add it to the tomatoes
Preheat your oven to 170 degrees
Butter a casserole dish and cover with an even layer of potatoes
Cover with a layer of zucchini
Add some of the grated tomato and mint mixture and add some of the mizithra
Drizzle with some oil
Repeat making sure to let each layer rest very lightly on top of the other – don’t press down
When the potato and zucchini are finished top off with the rest of the mizithra and add some milk and water
Cover with some foil paper for one and half hour and take off the foil for another half hour
